Mushroom and Feta Flatbread with Truffle Oil
Perfect as a light lunch, appetiser, or snack, this Truffle Flatbread is a delicious way to enjoy gourmet flavours in the comfort of your home. A big thanks to Vanessa & Anthony, over at Foodies Table NZ for the recipe.
INGREDIENTS:
1 cup self raising flour
1 cup Greek yogurt
1 onion, thinly sliced and caramelized⠀
Olive oil⠀
3-4 mushrooms, sliced⠀
½ cup feta, crumbled⠀
1 large sprig fresh thyme, leaves picked⠀
1 sprig fresh rosemary, leaves picked⠀
Drizzle of black truffle oil⠀
Freshly ground black pepper
METHOD:
1. For the flatbread mix 1 cup self raising flour & 1 cup Greek Yogurt, kneed until it forms a dough
2. Divide the dough into 4, flatten them and heat on a flat pan. Set aside.
3. Heat a glug of olive oil and a small pat of butter over medium heat and cook onions until softened. Reduce the heat to low and continue to cook until brown, stirring occasionally.⠀
4. Add the mushrooms
5. Top the flatbread with garlic, onion, mushrooms and feta. Bake for 8-12 minutes at 200°C until the feta is lightly browned.⠀
6. Remove from oven and top with thyme, rosemary and pepper. Finish off with a drizzle of truffle oil and serve immediately.
