Olive & Orange Glazed Chicken

INGREDIENTS:
2 chicken breasts
1/4 cup green olives, pitted and chopped
1/4 cup black olives, pitted and chopped
1 orange (zest and juice)
1 tbsp honey
1 tbsp olive oil
2 cloves garlic, minced
1 tsp dried thyme
Salt and pepper to taste
Fresh parsley for garnish
METHODS
Prep the Ingredients:
Zest and juice the orange.
Chop the olives and set them aside.
Cook the Chicken:
Heat the olive oil in a pan over medium-high heat. Season the chicken breasts with salt, pepper, and thyme. Add them to the pan and cook for 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the pan and set aside.
Make the Glaze:
In the same pan, add the minced garlic and sauté for about 1 minute until fragrant. Add the orange juice, zest, honey, and olives. Stir to combine and simmer for 3-4 minutes, allowing the glaze to thicken slightly.
Combine:
Return the chicken to the pan and spoon the glaze over it. Cook for another 2-3 minutes, ensuring the chicken is coated with the glaze.
Serve: Garnish with fresh parsley and serve immediately. This dish pairs well with rice or couscous.
