Grilled Prawns with Manuka Smoked Chilli Salt

INGREDIENTS:
1 lb (450g) large prawns, peeled and deveined (tails on)
2 tablespoons olive oil
1 teaspoon Manuka Smoked Chili Salt (or to taste)
1 lemon, halved
Freshly ground black pepper, to taste
Fresh herbs (like parsley or cilantro) for garnish
METHOD:
- Preheat the BBQ: Heat your grill or BBQ to medium-high heat.
- Prepare the Prawns: In a mixing bowl, toss the prawns with olive oil, Manuka Smoked Chilli Salt, and a pinch of freshly ground black pepper. Ensure all prawns are well coated with the seasoning.
- Grill the Prawns: Place the seasoned prawns on the preheated grill. Cook for 2-3 minutes per side, or until the prawns turn pink, opaque, and slightly charred.
- Grill the Lemon: While the prawns are cooking, place the lemon halves cut side down on the grill. Grill for about 2 minutes or until lightly charred.
- Serve: Remove prawns from the grill and transfer to a serving platter. Squeeze the grilled lemon over the prawns and garnish with fresh herbs. Serve immediately.
